Chocolate Nutiva Cauliflower Smoothie

You are putting WHAT into your smoothie? YES friends I jumped on the bandwagon and have started adding this vegetable to my post workout smoothie and I like it a lot. I am getting the extra nutrients, it adds great texture, and it is a cheap ingredient. All positives, when it comes to creating a healthy, nourishing, and delicious smoothie. I started seeing this cauliflower smoothie craze mentioned by Instagram rock star Shut The Kale Up and an article written on Mind Body Green. I eat a lot of cauliflower in general because I like that it is one of those versatile vegetables that you can pretty much pair with anything and dress it up with anything.

Chocolate Nutiva Cauliflower Smoothie

Let us talk about this smoothie! Nutiva recently sent me some packets of their Plant Protein Superfood 30 in chocolate and vanilla to sample. It is jam packed with:

  • 20g of protein
  • 4g of fiber
  • Rich in Vitamins C and A to support your body immune function
  • Vegan - Gluten Free - Non-GMO
  • 120 calories per packet

I am picky about my protein powders as so many brands now have a lot of added junk in it, that upsets my stomach, so I make sure to always check the ingredients. My symptoms to those junky ingredients are instant bloating, which we all know is annoyingly uncomfortable. I have already made a handful of smoothies and I have experienced no bloating. I feel great. Please note that these packets are definitely not on the sweeter side, so if you like your smoothies to be sweet, I recommend adding banana, mango, dates, etc. It all depends on what your taste buds like, but for me, I am okay with not so sweet.

16 Getting To Know Me Things

July has been one heck of a roller coaster month! It started out REALLY strong, positive, adventurous, flirtatious, carefree, and flat out crazy and fun! But at the end of the month, I have felt completely depleted, exhausted, stressed, and finding myself just needing to breathe and take some time to myself. It happens...It is hard to go full speed ALL the time. This last week of July is here and I am ready for a new month! It was nice to spend this past week taking a step back and forcing myself to just CHILL OUT!

It is easy to get wrapped into the craziness here on the island and to want it to it ALL and have an EPIC summer, but if you try to do that here, you will be broke, tired, sluggish, and depleted. I always remind myself...do what YOU want to do and do what makes YOU happy! With that being said...cheers to FRIDAY and cheers to fun and light heartened post...Thanks Emily for the post inspiration!

16 Getting To Know Me Things

What brings you the greatest joy?

Waking up every morning and realizing that I live on Nantucket Island! After so many years of wondering where I am supposed to be personally and professionally; always struggling with not being comfortable in a place that I was living; and constantly asking myself..."Where Is My Happy Place?" It is nice to know that this is it. I know that you can "never say never", but for right now this is JOY!

Nantucket Island

This is where I feel my BEST! I feel confident, strong, beautiful, powerful being able to live in the ocean; soak up the sunshine and the salty air; and to ROCK that beach hair every darn day of the week. My life here is by no means perfect and I still have slip ups, bad dates, nagging thoughts, and frustrations with my jobs. But being able to step away from these things and walk on the beach is JOY! It puts everything in perspective for me as soon as I step onto the sand or run into the water!

Nantucket Island

What are your vices?

All the NuttZo every single morning! Make sure to use ACK-20 to get 20% off your online order! The crunchy ones are by far my favorite and these nut butters keep me fueled and my belly happy, plus I absolutely LOVE working with them and their team. The BEST!

What is on your nightstand?

At least 2 books, my journal, my Garmin watch, and phone, which I charge both at night. I am currently reading "Here's To Us", by Elin Hilderbrand. I use my phone as an alarm but always have it on silent.

Do you have a secret talent?

Of course, I do...It is called being AWESOME!

What should everyone try at least once in their life?

Something that scares the absolute crap out of them! For me, that was bungee jumping in Switzerland out of a gondola over a mineral lake! Taking that step over the edge and just falling was by far the scariest thing I have ever done. It was AWESOME, scary, fun, and I have no regrets! My Mom, on the other hand, wanted to kill me after she heard that I did this.

What makes you laugh?

Little Lucy of course...Having a dog is free entertainment every single day!

Nantucket Island

What is one thing people would be surprised to know about you?

I am scared to death of public speaking! I absolutely cannot stand it and will avoid it at all costs!

What is on your bucket list?

To do a surf and yoga retreat in the winter months! I think that this would be the perfect vacation to escape the isolation and cold months on Nantucket during the winter. Who wants to join me and who has some favorite locations? I also REALLY want to support my friend Andrew and try one of his adventures on a sailboat. How amazing does this look?

What is on your feet right now?

Bare feet as much as possible...Usually salty, covered in sand! HA! Sneakers are always by the side of my desk, along with flip flops right next to them. Summer feet ALL summer long!

How did you make your first dollar?

Babysitting...Of course! When you are the oldest of 4 you start early!

What superstition do you believe in?

  • I never walk under ladders;
  • I freak out when a black cat walks in front of me;
  • I always throw a penny off the ferry when we go past Brant Point!

What sports did you play in high school?

I played field hockey, volleyball, and lacrosse all 4 years. Thank goodness that I did, because I was NOT a fan of high school and being completely occupied with sports all year round kept me busy and out of trouble. And all those hours on the field definitely paid off!

What items in your closet do you wear the most?

I feel like y'all know the answer to this...Lululemon shorts, tops, and sports bras ALL SUMMER LONG! And yes all three of those items every day.

What is the best gift you have ever received?

Giving myself Kala and Lucy! Having dogs in my life is and will be the best gift I could ever give myself. So many lessons learned...so many adventures taken...so many memories made! I don't need to keep going on about this, y'all know how I feel about dogs!

What is on your kitchen counter?

LOTS of Simply Organic spices...Ninja Blender...Cuisinart Toaster Oven...Coffee Machine...And ALWAYS flowers! With the humidity and the ant problem during the summer months, you do not want to leave that much food out on the counters otherwise, there will be a serious raid!

What would you never leave home without?

I hate to admit it, but I never leave without my phone.

Happy Friday Friends and have a BEAUTIFUL weekend!

What brings you joy?

Chai Cherry Nut Butter Protein Smoothie

YES...The title of this smoothie sounds as good as it tastes! All of my absolute favorites in one jar is the absolute perfect smoothie combination to have after a sweaty summer workout. Join me over the next couple of weeks with FitApproach for the #SummerChallenge and spread the word about Bob's Red Mill Nutritional Boosters!

Last week I received this big old box of deliciousness from Bob's Red Mill and FitApproach. There are enough protein powders, flavors, and recipes to last me for months. High-Fives to this #SummerChallenge that will entail lots of healthy and delicious recipes. I am a BIG fan of Bob's Red Mill products, so I was very excited to be chosen to review their new products.

I am very skeptical when it comes to protein powders because a lot of the time I do not agree with the ingredients and neither does my body. I also do not rely on protein powders as they are not REAL foods, but they are a great substitute for getting the protein, calories, and nourishment that my body needs while training. Plus, when you find a good protein powder, the recipe creations are endless...Happy Belly = Happy Katie!

Bob’s Red Mill Natural Foods produces more than 400 products, including a full line of certified gluten free products and an extensive line of certified organic products. With a wide variety of whole-grain products—from flours and hot cereals to baking mixes and grains—Bob’s Red Mill has “whole grain foods for every meal of the day.” An Employee-Owned company, Bob’s Red Mill is the nation’s leader in stone milling and is dedicated to producing natural foods in a natural way. They stone grind all common and many uncommon grains into flours and meals on over one-hundred- year-old mills. With all of the sophisticated knowledge of recent times, no machinery has yet been developed that grinds grains into flour as well as these slow-turning, flint-hard quartz millstones of the kind used by millers since ancient times. I LOVE this company and their product and I hope that after reading this post you will check them out and possibly even make some purchases and join the #SummerChallenge to live a healthy and active Summer!

And now onto that smoothie...

Ingredients:

Directions:

  • Add all ingredients into your blender! (I use the Ninja Blender and LOVE IT)
  • Blend until smooth as can be;
  • Pour into an "almost empty" nut butter jar of choice;

I love everything about this smoothie and I hope you will try it sometime this Summer! I think next time I am going to make a Vanilla Mango Nut Butter Smoothie...Mangoes are the fruit of the week that I have been currently crushing on. Yes...they are a pain in the butt to peel, but 100% worth it...Stay tuned...Happy Monday Friends! XOXO

Simple Romesco Sauce

I like "simple" when it comes to cooking during the week...Simple ingredients and simple directions, with meals that are ready in 45 minutes or less. On Sundays, when you seem to have all the time in the world here on Nantucket, you can cook more elaborate and slow cooked meals that make the house smell delicious, take all day, and maybe even leave you some leftovers for a few days. But when the leftovers are done, I want quick, healthy, and easy meals that I can whip up.

Over Christmas Stroll weekend on Nantucket, a friend who is also a private chef, cooked a delicious meal for a group of us. It was such a treat to have her! I was pleasantly surprised by the meal she prepared for us and how it really was simple. Could I recreate that meal myself...Probably not, but I was pretty happy to walk away from the meal knowing that I could recreate at least one of the things she made.

Simple Romesco Sauce

I have made this Simple Romesco Sauce many times and it is DELICIOUS! It is simple, healthy, and very versatile. You can throw it on anything and it will taste good! Most romesco sauces call for bread, but I have not added that to the mix and neither did the chef. I honestly do not think it needs it. The recipe that I have shared with you has great texture. Just make sure to not blend the ingredients too much. The chef used the sauce with chickpeas, grilled squid, and potatoes (see above...perfect presentation that seemed effortless). I have used it with baked chicken thighs and vegetables (see below). Both were so good and a sauce that I will continue to make throughout the year! Give it a try and let me know what you think.

Ingredients:

  • 1/4 c slivered almonds
  • 6 ounces of roasted red peppers
  • 1 T olive oil
  • 1 T red wine vinegar
  • 2-3 garlic cloves
  • Dash of Simply Organic Smoked Paprika; Red Pepper Flakes, and Salt to taste!
Simple Romesco Sauce

Directions:

  • Add all ingredients to the Ninja Kitchen Blender;
  • Blend until well mixed, but not completely smooth! It is good to have some texture;
  • Drizzle onto your entree and serve the remaining amount in a bowl for dipping!

Chocolate Protein PowerBar Smoothie

During my high school and college years, I played a lot of field hockey! I was always going to practices, tournaments, tryouts, and even traveling to other countries. I loved every second of it...I worked hard...I trained hard...and I ate a lot to fuel that lifestyle. At that time, PowerBar was actually my bar of choice. I ate a lot of them! So it was kind of a "flashback" moment, when PowerBar reached out to me, to do a review on some of their newest products.

Upon opening the box, I went straight to the ingredient list and I was impressed...Lots of protein, low sugar, and simple flavors. They looked good to me! The bars are tasty and perfect for when you know you are going to have a busy day and need a quick snack. You can never go wrong with the Chocolate and Peanut Butter combo in my opinion.

As far as the shakes go, they taste good on their own, but I wanted to make something a little more hardy and creative...As you know I like to eat my smoothies with a spoon and in a bowl. This Chocolate Protein PowerBar smoothie was PERFECT after my Saturday workout!
