METHODRIDE - Let's ride!!! Finding a clean, fun, and affordable cycling studio that is only a couple of minutes away from home...WINNING! My relationship with spinning is EH...I love and hate it, but it's a quick and effective workout that gets the job done. I have been cycling at MethodRide for a little over a month now and I love it! RAW ELEMENTS SUNSCREEN - I 100% admit that I am a sun worshipper. I love my Vitamin D. I love to be outside by the pool, by the ocean, and to just be in the outdoors and soak up that salty air. As you know, I love the heat and humidity. I love to come back from a run dripping in sweat. Is it hard running in this heat, heck yeah, but I love a good challenge and since we don't have hills here, so I kind of consider that my hills...Does that count? LOL! 

I also have been on the hunt for a sunscreen that is natural, that works, and that doesn't make me break out. SUMMER READING - I have been in the worst and longest reading rut! I used to read every single night for 30 minutes to an hour and now I can hardly even get through a page, let alone open my book when I crawl into bed. I am blaming it on technology and how I am constantly swiping...Right?!?! I would constantly go to the library and pick up books...Try to start them...Read 10 pages and then return it...SIGH!

BUT...Thank goodness for friends who LOVE to read and have a plethora of book recommendations! My little sister is so good for this. With that being said, I FINALLY stumbled upon the perfect summer read. And it is a series, so there are two more reads that I can jump right into and not have to worry about what to read next. It’s always the little things that make me happy!

Crazy Rich Asians

I just started this book last week and it is the perfect summer read. It is a page-turner...Great to read by the pool and at night...It is easy, relaxing, and FUN. And at the end of a long day, this is exactly the kind of book I want to read. Reading helps me put my phone away...slow my mind down...relax...and get lost into something that has nothing to do with the social media world.

QUICK EFFECTIVE CIRCUITS - This month my workouts have involved a lot of spin classes at MethodRide...Cardio on the StepMill...Early morning runs...and quick and effective workout circuits. When it comes to my workouts, I always listen to what my body is wanting. Some weeks it is a lot of cardio and other times I want to lift all the heavy things. I just do what works best for me. Here's a fun little one to tackle this week...It's simple, effective, and a full body workout.

Nutty For NuttZo - Recipes by Marissa

I am truly grateful for a lot of things, but as of lately I am grateful and appreciative of friends who LOVE to bake and are able to write guest posts for me when my life is too hectic and crazy to even think straight! I need to slow down and I am hoping that Thanksgiving week will allow me to do just that. My goals for next week are to breathe deeply + practice lots of yoga + move a little bit slower + enjoy time with family and friends + press the RESTART button! Sounds like a good plan to me...Now I just need to follow through with that! DOH! 

In the meantime, I suggest you check out these NuttZo recipes by my fabulous friend Marissa! Yes, this young woman is a ROCK STAR with a heart of gold. And like me, she is a #NuttZoFANATIC. If you do not have NuttZo on hand, you can use another nut butter of choice. These recipes are perfect for the holidays or honestly anytime of year because anything with nut butter is the BEST! NuttZo Pumpkin Spice Cookies

Ingredients

  • 1/4 c Power Fuel NuttZo
  • 1/2 c pumpkin puree
  • 1/4 c coconut flour
  • 2 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp apple cider vinegar
  • Optional: 1-3 T sweetener of choice
  • Optional Add - Ins: chopped nuts, shredded coconut, dried fruit, or cocoa nibs

Directions

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  2. In a small bowl, mix together the baking soda, baking powder, salt, and apple cider vinegar. Stir the mixture well and set to the side.
  3. In a bowl, mix the NuttZo, pumpkin puree, egg, coconut flour, vanilla extract, baking powder, baking soda, salt, pumpkin pie spice, and/or sweetener of choice.
  4. Spoon cookies onto a cookie sheet.
  5. Cook for 10-15 minutes or until golden brown! ENJOY!

Gingerbread NuttZo Banana Bread

Ingredients

  • 5 ounces of banana mashed
  • 3 T Power Fuel NuttZo
  • 2 eggs
  • 2 flax eggs (for every T of ground flax meal, mix with 3 T of water)
  • 2 egg whites
  • 2 T psyllium husk powder
  • 1/4 c coconut flour
  • 1/4 c of water
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp apple cider vinegar
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • Spices: 2 tsp cinnamon + 1 tsp ginger + 1 tsp nutmeg + 1 tsp cloves
  • 1/4 c chopped pecans
  • Optional: 1 T coconut palm sugar or 1 chopped date

Directions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine all of the ingredients and mix until blended together.
  3. Pour batter into a greased loaf pan and bake for 50-55 minutes or until cooked all the way through. Let it cool and then ENJOY!
