Nutty For NuttZo - Recipes by Marissa
I am truly grateful for a lot of things, but as of lately I am grateful and appreciative of friends who LOVE to bake and are able to write guest posts for me when my life is too hectic and crazy to even think straight! I need to slow down and I am hoping that Thanksgiving week will allow me to do just that. My goals for next week are to breathe deeply + practice lots of yoga + move a little bit slower + enjoy time with family and friends + press the RESTART button! Sounds like a good plan to me...Now I just need to follow through with that! DOH!
In the meantime, I suggest you check out these NuttZo recipes by my fabulous friend Marissa! Yes, this young woman is a ROCK STAR with a heart of gold. And like me, she is a #NuttZoFANATIC. If you do not have NuttZo on hand, you can use another nut butter of choice. These recipes are perfect for the holidays or honestly anytime of year because anything with nut butter is the BEST! NuttZo Pumpkin Spice Cookies
Ingredients
1/4 c Power Fuel NuttZo
1/2 c pumpkin puree
1/4 c coconut flour
2 tsp vanilla extract
2 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp apple cider vinegar
Optional: 1-3 T sweetener of choice
Optional Add - Ins: chopped nuts, shredded coconut, dried fruit, or cocoa nibs
Directions
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
In a small bowl, mix together the baking soda, baking powder, salt, and apple cider vinegar. Stir the mixture well and set to the side.
In a bowl, mix the NuttZo, pumpkin puree, egg, coconut flour, vanilla extract, baking powder, baking soda, salt, pumpkin pie spice, and/or sweetener of choice.
Spoon cookies onto a cookie sheet.
Cook for 10-15 minutes or until golden brown! ENJOY!
Gingerbread NuttZo Banana Bread
Ingredients
5 ounces of banana mashed
3 T Power Fuel NuttZo
2 eggs
2 flax eggs (for every T of ground flax meal, mix with 3 T of water)
2 egg whites
2 T psyllium husk powder
1/4 c coconut flour
1/4 c of water
1 tsp baking powder
1 tsp baking soda
2 tsp apple cider vinegar
1/2 tsp salt
2 tsp vanilla extract
Spices: 2 tsp cinnamon + 1 tsp ginger + 1 tsp nutmeg + 1 tsp cloves
1/4 c chopped pecans
Optional: 1 T coconut palm sugar or 1 chopped date
Directions
Preheat the oven to 350 degrees.
In a large bowl combine all of the ingredients and mix until blended together.
Pour batter into a greased loaf pan and bake for 50-55 minutes or until cooked all the way through. Let it cool and then ENJOY!
