Oatmeal Banana Honey Almond Butter Chocolate Bake
It has been FOREVER since I have not only BAKED, but also shared a recipe here in this space! But it is a NEW year and why not step out of my comfort zone and do something NEW. I typically don’t bake, because I am not good at it, I like when other people make me goodies, and well, when you had an eating disorder, baking and having sweets laying on the counter was just a hot mess.
BUT…that was the old Katie and this is the NEW Katie. Have I said NEW enough yet…LOL!

I am really excited to have partnered up with Bob’s Red Mill to talk about their products and to create a healthy, easy, and delicious recipe. All the GOOD stuff my friends!
I was thinking that I could make a sweet or savory oatmeal bowl, overnight oats, an oatmeal smoothie, but then I was doing some research and said, let’s just bake and do something different. I saw the recipe posted on my good friend’s site and thought I can make this and it will be really GOOD! And I had all the ingredients already so it was a total win-win for me, because I get annoyed when I have to go out and buy a ton of ingredients for a recipe. Does anyone else feel this way?
This was really really really good and easy and healthy, so a WIN-WIN in my eyes and more importantly my stomach. This recipe is also versatile. Add nuts instead of chocolate chips. You can use whatever nut butter you have on hand. You could even add more fruit. Do what works for YOU!
INGREDIENTS:
2 T of Abby’s Better Almond Honey Butter (use KATIEUHRAN to 15% off)
4 ripe bananas (I used frozen bananas so there was more liquid when mixing)
1 egg
½ T vanilla extract
1 tsp DAK’s Chocolate Crave (use KATIEUHRAN10 to get 10% off)
¼ c chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees;
Spray 8 x 8 baking dish with nonstick spray and set aside, while you prepare everything else;
Smash the bananas until smooth, with a little bit of chunk, if you like it that way;
Add the Bob’s Red Mill Old Fashioned Rolled Oats, vanilla, egg, Abby’s Better Honey Almond Butter, and cinnamon. Blend until well mixed;
Pour the mixture into the baking dish;
Top with chocolate chips and bake for 40 -45 minutes. (the original recipe called for 20-22 minutes).;
Serve warm and ENJOY!
