Simple Romesco Sauce
I like "simple" when it comes to cooking during the week...Simple ingredients and simple directions, with meals that are ready in 45 minutes or less. On Sundays, when you seem to have all the time in the world here on Nantucket, you can cook more elaborate and slow cooked meals that make the house smell delicious, take all day, and maybe even leave you some leftovers for a few days. But when the leftovers are done, I want quick, healthy, and easy meals that I can whip up.
Over Christmas Stroll weekend on Nantucket, a friend who is also a private chef, cooked a delicious meal for a group of us. It was such a treat to have her! I was pleasantly surprised by the meal she prepared for us and how it really was simple. Could I recreate that meal myself...Probably not, but I was pretty happy to walk away from the meal knowing that I could recreate at least one of the things she made.
I have made this Simple Romesco Sauce many times and it is DELICIOUS! It is simple, healthy, and very versatile. You can throw it on anything and it will taste good! Most romesco sauces call for bread, but I have not added that to the mix and neither did the chef. I honestly do not think it needs it. The recipe that I have shared with you has great texture. Just make sure to not blend the ingredients too much. The chef used the sauce with chickpeas, grilled squid, and potatoes (see above...perfect presentation that seemed effortless). I have used it with baked chicken thighs and vegetables (see below). Both were so good and a sauce that I will continue to make throughout the year! Give it a try and let me know what you think.
Ingredients:
1/4 c slivered almonds
6 ounces of roasted red peppers
1 T olive oil
1 T red wine vinegar
2-3 garlic cloves
Dash of Simply Organic Smoked Paprika; Red Pepper Flakes, and Salt to taste!
Directions:
Add all ingredients to the Ninja Kitchen Blender;
Blend until well mixed, but not completely smooth! It is good to have some texture;
Drizzle onto your entree and serve the remaining amount in a bowl for dipping!
