THE FAMOUS NEFF CHILI
Shannon has talked a BIG game about this chili recipe, since we started dating and it was only until this weekend that I FINALLY got him to make a batch, because it was cold enough in Charleston. The recipe was originally created by his step-mom Mary, (who is one hell of a cook), but then Shannon made his own little adjustments here and there. Needless to say it is simple, hearty, easy, and DELICIOUS. I highly recommend that you make a batch for when the next cold front rolls in. And remember, that chili is totally one of those recipes that you can add your own personal touch to. You could add jalapenos, for more heat...different kinds of beans...bell peppers...really whatever the heck you want, but you can always use this as the base.
INGREDIENTS:
3 pounds of ground beef (I love big chunks, so Shannon made sure to make it chunky for me)!
½ red onion finely diced
4 celery stalks finely diced
2 cans (16 ounces) Bush’s Chili Beans (HOT)
1 can (16 ounces) Red Kidney Beans
1 can (28 ounces) Hunts Whole Tomatoes
1 Homemade Garlic and Onion Sauce (from Shannon’s step-mom...it’s amazing)
3 tsp of Dak’s Spices Kaboom
DIRECTIONS:
Heat up a saute pan and add the Primal Kitchen Organic Extra Virgin Olive Oil. Add the celery and onion and cook until it just starts to get brown and makes the kitchen smell heavenly.
In a LARGE stock pot dd the meat and the Dak’s Spices Kaboom. Cook until brown. Drain off the liquid, then add the celery, onion, benas (with the juices from the can). Stir it all together.
Cut up the whole tomatoes in half quarters and add to the pot along with the homemade tomato sauce. Add some more Dak’s Spices Kaboom. Stir it all together.
Let it simmer on the stove for as long as you want. Make sure to stir frequently so that it doesn’t get stuck on the bottom. We let it sit for a good 4-5 hours before devouring!

Shannon serves his up with a sleeve of Saltine Crackers...I like mine with Food Should Taste Good tortilla chips or crispy bread. It is hearty, delicious, and perfect for a cold night. This batch made a lot of leftovers too, so it was nice to have it throughout the week. I enjoyed TWO heaping bowls of this badass chili and Shannon enjoyed the rest...It is a must-make this winter, before the temperatures start to rise.
