Life Lately - July Edition
Did you know that it has been really hot in CHS? LOL!!! It is kind of all we talk about, but damn it is freaking humid, hot, and sticky and I feel like I am constantly sweating. This month and even the end of June has been intense. I feel like I have been stuck in the air conditioning for too long. Even the dogs are not fans. I have cut back on their walks and try to take them to the beach really early to swim, before the crowds, and before the heat index hits plus 100. Anyway, I don’t want to sound like a “Negative Nancy”…it is what it is and I can’t control it. With that being said…HELLO JULY! Two weeks in and thought I would share a few things with y’all that have been happening. Grab a cup of coffee and some water (stay hydrated) and let’s dive in…
EATING
Simple traditional tortilla chips with NO SEED OILS and a simple summer meal…Honestly what else do you need? Maybe a spicy margarita, but I digress! Summer is in full swing and as the heat increases the complexity of my meals decreases. And I think this one is my quickest one to date. Ready in less than 5 minutes, totally versatile, satisfying, salty, crunchy, and delicious, it’s a winner dinner for SURE!
Here’s how to make it:
handful of Lime Masa Chips
Mozzo curry chicken salad (you could use any chicken salad pre-made or homemade)
sauteed cherry tomatoes and onions
sprinkled with some red pepper flakes
Make sure to use my code KATIEUHRAN to get 20% of your order!
Greek yogurt bowls on repeat, because I can make this in less than 5 minutes after my workouts and it tastes so damn good…It’s packed with protein, carbs, fats, and all the good stuff to nourish my body and mind! I use Teddie’s Peanut Butter (extra crunch) and Fage Greek yogurt, and since it is peach season, I am eating a lot of peaches and my body is craving them! So simple and SO GOOD!
READING
I have five books on my coffee table from the library and I am not mad about it! I am that girl, who loves to get notified that I can come pick up my books. I love reading and I am pretty impressed with how many I have gone through this summer. Books are fun, an escape, and I love how most of my social media friends are book nerds too, so I am always getting new recommendations. One of these days maybe I should start a book club?!?! I have never been part of one…These are the books that are on my coffee table…
Cassandra In Reverse - currently reading and it is just meh…I’m ready to be done with it!
The Giver of Stars - Will read next!
Crescent City - House of Earth and Blood (I don’t know if I can finish this by the end of the month, as it is 800 pages. I may have to return it and read another time!)
WORKOUTS
A little bit of this and that, but not really deviating from my normal routine in CHS! As I have said, like 500 times, it is really hot here, so running outside can be really icky and wet and pretty intense, so not as many long runs, but lots of strength training, and my usual classes at The Works. Sometimes there are weeks, when I just want to be in that room, surrounded by inspiring people, who just get me, and I like that feeling of being supported. Other weeks, I want the alone time and will focus on running and walking, and will sweat away on the StepKill. Since I am not training for anything right now, I just do what I want and what feels good. It isn’t always EASY and it takes a lot of effort some days to show up, but sweating is therapy and being healthy and strong is so important, so I show up and I just do it.
MANIFESTING
Water…Nourish…Hydrate…Dream…Seek out peace…Be fearless…Just a few of my words that I am manifesting this July! It’s hard to believe that there are only 6 months left of this year and I don’t want to focus on that, I want to focus on the present. In this chapter of my life, it is just one day at a time and right now, that works for me and it feels right! I am in a chapter where I need to take care of me, figure out me, believe in me, and bring myself BACK, better than I was before.
Happy July friends and I hope that y’all are having a beautiful month!
xoxo
