Hi Friends! Here we are in the middle of July and it is still incredibly HOT! I typically don’t complain this much about the heat, but DAMN, when the heat index is 115 degrees and the pups can’t go on their walks, I get a little perturbed. I don’t remember it being this bad, or maybe I am just getting old…Whatever it is, the heat is stifling and there is no need to complicate things in the kitchen, so it’s time to share some “Simple Summer Meals”. These meals are so basic, but are also packed with all the nutrients that I need to keep my body fueled. I am not a recipe creator and I don’t do fancy food (I save that for when I go out to eat). I eat the foods that help me perform at my best athletically, taste good, and make me feel good. The best part about these recipes is that they are versatile, so you can adjust them to your needs, goals, and taste buds…ENJOY!

Grilled Chicken and Japanese Sweet Potato

Simple Summer Meals

Air fry ALL the Japanese sweet potatoes and add some protein, veggies, fats, and BOOM dinner is ready! Easy, versatile, and jam packed with all the nutrients to keep my body healthy and thriving. When I am doing a lot of cardio or running, I eat a lot of Japanese sweet potatoes. They are a little bit more expensive, but I like the taste and they are extra starchy, and my body needs those carbohydrates to fuel my muscles and my brain. Plus, they taste freaking AMAZING!

  • Air-friend Japanese sweet potato (I microwave for 4 minutes, slice, and then air fry for 45 minutes at 400 degrees

  • Grilled skinless boneless chicken breast seasoned with garlic powder and red pepper flakes

  • Grilled corn on the cob and then I like to shred it

  • Mixed greens and some fresh basil

  • Top with dressing of choice!

Salmon Skewers and Japanese Sweet Potato

Beef and Rice

Simple Summer Meals

I go through weeks when all I want is Jasmine rice and if I am too lazy to make it, I just pick up a large box from a local Chinese takeout place and use it up for two meals. It is cheap and easy. This dinner plate is also easy and ready in 15 minutes. BOOM!

  • Jasmine rice

  • Ground beef seasoned with red pepper flakes and garlic powder (I like it chunky)

  • Sauteed cherry tomatoes

  • Topped with cabbage slaw and hot sauce!

Savory Oats

Simple Summer Meals

If you know you know…I eat this A LOT and I eat it all year round! It’s easy to make and I can usually whip it up in less than 15 minutes and it is loaded with all the things that my body needs, plus this recipe is versatile, so you can really use whatever veggies you have on hand.

  • 1/2 c of oatmeal

  • Handful of broccoli that I cook with garlic powder and red pepper flakes

  • 3 eggs that I cooked on the Baking Steel Mini Griddle

  • Heaping spoonful of guacamole

  • Handful of mixed greens

  • Topped with hot sauce!
