Meal Prep with the Mini Griddle

I am back to talk about another great way to use your Baking Steel Mini-Griddle to create easy, healthy, nourishing meals to set yourself up for a successful week, month, and season to inspire you to feel and look your best from the inside out. 

I am always amazed at all the great ways that this mini-griddle has helped improve my cooking to taste better, but also make my life easier when it comes to making meals. It does all the things and it is why I love using it and use it daily. If you have been following my recipes, I have done burger bowls, fried eggs, salmon, pancakes, and now I am doing meal prep. 

The mini-griddle is the perfect size to use for meal prep for one person. You can fit enough protein and veggies on there to create at least one to two meals for the next few days for breakfast, lunch, or dinner. I actually used this recipe to create the next before a day of travel. I am that person who is always bringing food with me when I travel, because that’s who I am and I don’t like to eat airport food, when I create a healthy meal that will make me feel a heck of a lot better than fast food. 

Meal Prep is a big word that is spewed all over social media and it can mean a lot of different things for each person. It really depends on your nutritional needs, goals, allergies, schedule, needs, etc. I could go on and on, but overall meal prep is always worth it, when you know you have to travel or you are going to have a busy week that won’t allow you to cook as much. Meal Prep saves time, money, and all while keeping you on a healthy path of feeling strong, energized, and happy. 

This “Meal Prep” travel option was something that I whipped up, because I didn’t want to waste any of the produce that I had in the fridge, but I also knew that it would have enough protein, fats, carbs, and greens to make me feel good. And it did. And this meal literally only took 15 minutes to make. Meal Prep is a no-brainer and with the way that the mini-griddle heats up, it makes cooking the goods more fun and easier. Plus, I love the way it cooks my proteins and this chicken turned out DELICIOUS.

Here’s how to make it…And remember that this recipe is very versatile, so you can really use whatever protein or veggies you have on hand and then pair it with whatever sides or toppings will help you feel good and meet your nutritional needs!

INGREDIENTS:

  • 1x skinless boneless chicken breast (seasoned with oregano, garlic powder, red pepper flakes)

  • Asparagus

  • Mixed Power Greens

  • Guacamole

  • Rosemary & Salt Bagel

  • Mini-Griddle

DIRECTIONS:

  1. Heat up the mini-griddle to low heat;

  2. Spray with PAM;

  3. Add the diced asparagus and flip every few minutes;

  4. Add the diced chicken breast and flip after about 5 minutes;

  5. Add to Tupperware bowl/bowls;

  6. Add Mixed Power Greens (I added hot sauce and shook it all up)

  7. Let it sit overnight!

  8. Grab your sides and pack wherever you are going!
