Currently EATING

It’s been a LONG LONG LONG time since I have done a post about anything food related and I have honestly missed it! There are always reasons for things and a few of them obviously have to do with my eating disorder. BUT…since I am only looking and moving forward and upward, through lots of work with Cortney, it is time to bring back the food! My feelings about food are obviously changing and food is becoming FUN again!

Before I dive into these amazing EATS, I want to take a quick moment to talk about one of many things that I am currently working on with Cortney, that relate to food and breaking old RULES! Eating disorders are full of toxic habits, rules, restrictions that literally take over your life in a harmful way. They are exhausting to follow and maintain both mentally and physically. This new chapter with Cortney is exciting and also terrifying, because breaking old habits can be really hard, but as I have said before, each day, week, and month, I am noticing big changes in my overall well being, so the work is working and I will and need to stick to it.

Let’s talk about one RULE that I am currently working on…TRYING NEW THINGS! For years, I was eating the same thing day in and day out. And I learned from working with Cortney, that this is actually harmful to the body and can deprive the body of nutritional benefits. Plus, eating the same thing day after day is boring AF. Food is beautiful. Food is fun. Food is freaking delicious and there are so many yummy recipes to try and enjoy and I have missed that so much, so each day, week, and month, I am breaking those rules and trying new things and my body is loving it. It isn’t something that is happening overnight, because it is scary at times, but it is also fun, rewarding, and my taste buds are rejoicing.

Here are just a few of my recent eats that have involved breaking old RULES, fueling my body properly for my intense workouts, but also just having fun with food and enjoying food.

Air fried Japanese sweet potatoes on REPEAT! They are a little more expensive than regular sweet potatoes, but they are worth it. I love the texture, the way they taste, and they work really well for my body when I am running a lot of miles. Plus they pretty much go with everything…so DELISH!

MMMM…papaya is so delicious and has a total summer vibe, but did you know that is is jam packed with nutritional benefits?!?! Papaya contains high levels of antioxidants, Vitamins A, C, and E, strengthens the immune system, improves digestion, may reduce inflammation, and protects against skin damage.

More protein please!!! Lately I have been having 3 eggs instead of 2 and one egg white…More calories and more protein and eggs are definitely a staple in my kitchen. Versatile and easy the amount egg recipes are endless. I really want to start making some easy avocado egg salad recipes and have a few saved that need to be made of the next couple of weeks.

This is my ideal plate! Prime Rib night at The Refuge is my favorite night and I LOVE a big fatty piece of prime rib. Paired with crunchy fries and some crunchy green beans, it is heaven on a plate. There is nothing else to say as this plate makes me very happy!

My go to after a sweaty kick ass yoga class, this smoothie is packed with all the goods! Protein…Healthy fats…and BEETS! Did you know beets are packed with nutrients and rich in antioxidants and minerals, which are all good things for your cardiovascular health! I never thought I would be adding beets to a smoothie, but here I am and I am slightly obsessed. GAME CHANGER! Sharing this recipe next week…
